Prepare the Egg Mixture
In a large bowl, whisk together the eggs, milk, vanilla extract, cinnamon, nutmeg, and sugar until well combined.

Soak the Brioche
Dip each slice of brioche into the egg mixture, ensuring both sides are coated well. Let them soak for a few seconds.

Cook the French Toast
In a large skillet, melt 1 tablespoon of butter over medium heat. Add the soaked brioche slices and cook for 3-4 minutes on each side, or until golden brown. Repeat with remaining slices, adding more butter as needed.

In a small bowl, combine the sugar and cinnamon. Mix until evenly distributed.
Vanilla Whip

In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Using a hand mixer or stand mixer, whip on medium-high speed until soft peaks form.
Candied Walnuts

Candy the Walnuts
In a small skillet, melt 1 tablespoon of butter over medium heat. Add the walnuts, sugar, and a pinch of salt. Stir continuously until the sugar has melted and coats the walnuts evenly, about 5-7 minutes. Remove from heat and let cool.
