    Cook the Eggs

    In a non-stick skillet, heat the olive oil over medium heat. Crack the eggs into the skillet and season with salt and pepper. Cook to your desired doneness (sunny side up, over easy, etc.) for about 2-4 minutes.

Spanish Rice

    Prepare the Spanish Rice

    In a medium pot, heat olive oil over medium heat. Add chopped onion and cook until translucent, about 3-4 minutes. Stir in minced garlic and cook for another minute. Add rice, stirring to coat. Pour in vegetable broth and tomato sauce, then season with cumin and salt. Bring to a boil, reduce heat to low, cover, and simmer for about 20 minutes, or until rice is cooked and liquid is absorbed.

Pinto Beans

    Heat the Pinto Beans

    In a small skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until the onion is soft. Stir in the canned pinto beans (drained and rinsed) and cook for about 5-7 minutes until heated through. Season with salt to taste.

Tortillas

    Warm the Tortillas

    In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until they are pliable.

Salsa Roja

    Make the Salsa Roja

    In a bowl, combine chopped tomatoes, onion, minced garlic, cilantro, and lime juice. Stir well and season with salt to taste. Let it sit for a few minutes for the flavors to meld.
