Churro Dough

Prepare the Dough
In a medium saucepan, combine water, unsalted butter, granulated sugar, and salt. Bring the mixture to a boil over medium heat.

Add Flour
Once boiling, remove the saucepan from heat and immediately stir in the all-purpose flour until a dough forms. Allow it to cool slightly.

Incorporate Eggs
Add eggs one at a time, mixing well after each addition until fully incorporated and the dough is smooth.

Prepare for Frying
Transfer the dough into a piping bag fitted with a large star tip.
Frying Churros

Heat the Oil
In a large, deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Churros
Pipe 4-6 inch strips of dough directly into the hot oil, cutting them with scissors. Fry until golden brown, about 2-3 minutes on each side.

Drain and Coat
Using a slotted spoon, remove the churros from the oil and drain on paper towels. While still warm, roll them in a mixture of granulated sugar and ground cinnamon.
Chocolate Sauce

Heat Cream
In a small saucepan over medium heat, heat the heavy cream until it just begins to simmer.

Melt Chocolate
Remove from heat and add the semi-sweet chocolate chips. Let sit for a minute, then stir until smooth and fully melted.

Add Vanilla
Stir in vanilla extract until well combined.
