Tortilla Chips

    Prepare the Tortillas

    Stack the corn tortillas and cut them into wedges (about 6 wedges per tortilla).

    Heat the Oil

    In a large pot or deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Chips

    Carefully add the tortilla wedges to the hot oil in batches, frying until they are golden brown and crispy, about 2-3 minutes per batch.

    Drain and Season

    Use a slotted spoon to remove the chips from the oil and drain them on paper towels. While they're still hot, sprinkle with salt.

    Chop the Ingredients

    Dice the ripe tomatoes, finely chop the red onion, and remove the seeds and finely chop the jalapeño pepper. Chop the fresh cilantro.

    Combine the Ingredients

    In a mixing bowl, combine the diced tomatoes, chopped onion, jalapeño, and cilantro.

    Season the Salsa

    Squeeze the juice of the lime over the mixture and add salt and black pepper to taste. Mix well to combine.

    Let it Rest

    Allow the salsa to sit for at least 15 minutes at room temperature to let the flavors meld together before serving.
