Method
Prepare Taco Filling
- 1
Cook the Beef
In a large skillet over medium-high heat, add the ground beef. Cook until browned, about 5-7 minutes, breaking it apart with a spatula.
- 2
Add Onion and Garlic
Stir in the diced yellow onion and minced garlic cloves. Cook for an additional 3-4 minutes until the onion is translucent.
- 3
Season the Mixture
Sprinkle the taco seasoning over the beef mixture, stirring well to combine. Add the tomato sauce, black beans (drained and rinsed), and corn. Mix everything together thoroughly.
- 4
Simmer
Reduce heat to low and let the mixture simmer for 10-15 minutes, stirring occasionally until heated through.
- 5
Finish with Cilantro
Remove from heat and stir in chopped fresh cilantro, reserving some for garnish.
Assemble Tacos
- 6
Warm Tortillas
Heat the flour tortillas in a dry skillet over medium heat for about 30 seconds on each side until warm and pliable.
- 7
Fill Tortillas
Place a generous amount of the taco filling into the center of each tortilla.
- 8
Top with Fresh Ingredients
Add shredded lettuce, diced tomatoes, and shredded cheese on top of the filling. Drizzle with sour cream and add sliced jalapeños as desired.
- 9
Garnish and Serve
Sprinkle reserved cilantro on top for garnish. Serve immediately with lime wedges if desired.
