Method

Preparation

  1. 1

    Cook the Protein

If using bacon or sausage, cook them in a skillet over medium heat until crispy (about 5-7 minutes). If using chicken, ensure it's pre-cooked and cut into bite-sized pieces. Remove from the skillet and set aside.

  2. 2

    Scramble the Eggs

In the same skillet, add olive oil and heat over medium. Crack the eggs into a bowl, add salt and pepper, and whisk until combined. Pour the eggs into the skillet and cook, stirring gently, until they are softly scrambled (about 3-4 minutes).

  3. 3

    Combine Ingredients

Once the eggs are scrambled, add the cooked protein of your choice and half of the cheddar cheese to the skillet. Stir well to combine and remove from heat.

Assembly

  1. 4

    Fill the Tortillas

Lay out the flour tortillas on a clean surface. Divide the egg and protein mixture evenly between the two tortillas.

  2. 5

    Add Cheese

Sprinkle the remaining cheddar cheese on top of the filling in each tortilla.

  3. 6

    Wrap the Burritos

Fold in the sides of the tortilla and then roll from the bottom up to form a burrito. Make sure to keep the filling inside while wrapping.

Cooking (Optional)

  1. 7

    Toast the Burritos

In the same skillet, place the burritos seam-side down and cook over medium heat for about 2-3 minutes on each side until the tortillas are golden brown and crispy.
