Prep the Potatoes
Preheat your oven to 425°F (220°C). Wash and scrub the Russet potatoes thoroughly. Cut them into thin strips, about 1/4 inch thick.
Season the Fries
In a large bowl, toss the potato strips with olive oil, salt, black pepper, and paprika until well coated.
Bake the Fries
Spread the seasoned potato strips in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway, until golden brown and crispy.

Prep the Potatoes
Wash the baby potatoes and pierce each one a few times with a fork to allow steam to escape. Preheat your grill to medium heat.
Hand-Cut French Fries
Prep the Potatoes
Wash and peel the large Russet potatoes. Cut them into even strips, about 1/4 inch thick.
Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).
Fry the Potatoes
Carefully add the cut potatoes to the hot oil in batches, frying for 4-5 minutes until golden brown. Remove with a slotted spoon and drain on paper towels.
Season the Fries
While still hot, sprinkle with salt and black pepper to taste.
