Cooking Pasta

    Boil Water

    In a large pot, bring water to a rolling boil. Add 1 tablespoon of salt to the water.

    Cook Spaghetti

    Add the spaghetti to the boiling water and cook according to package instructions until al dente (usually 8-10 minutes).

    Reserve Pasta Water

    Before draining, reserve about 1 cup of the pasta cooking water. Then, drain the spaghetti and set aside.

Preparing Sauce

    Cook Pancetta

    In a large skillet over medium heat, add the pancetta or guanciale. Cook until it becomes crispy and golden brown, about 4-5 minutes.

    Mix Egg Yolks and Cheese

    In a mixing bowl, whisk together the egg yolks and grated Parmesan cheese until well combined. Add black pepper to taste.

Combining Ingredients

    Combine Pasta and Pancetta

    Reduce the heat to low. Add the drained spaghetti to the skillet with the crispy pancetta. Toss to combine.

    Quickly pour the egg and cheese mixture over the pasta while tossing continuously. The heat from the pasta will cook the egg gently, creating a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

    Serve immediately, garnished with additional Parmesan cheese and freshly cracked black pepper.
