Dough Preparation

Activate Yeast
In a small bowl, combine warm water (about 110°F) with sugar and active dry yeast. Let it sit for about 5-10 minutes until frothy.

Mix Ingredients
In a large mixing bowl, combine all-purpose flour and salt. Create a well in the center and add the activated yeast mixture and olive oil.

Knead the Dough
Mix until a dough forms. Transfer to a floured surface and knead for about 8-10 minutes until smooth and elastic.

Let the Dough Rise
Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm place for 1-2 hours, or until doubled in size.

Preheat the Oven
Preheat your oven to 475°F (245°C) while the dough is rising.

Shape the Dough
Once the dough has risen, punch it down and transfer it to a floured surface. Divide it into two portions and roll out each portion into a circle about 12 inches in diameter.

Add Toppings
Transfer the rolled-out dough to a pizza stone or baking sheet. Slice the fresh mozzarella and tomatoes. Evenly distribute the mozzarella and tomato slices over the dough. Drizzle with olive oil and season with salt and black pepper.

Bake in the preheated oven for 10-12 minutes or until the crust is golden brown and the cheese is bubbly.

Remove the pizza from the oven and top with fresh basil leaves. Allow to cool slightly before slicing and serving.
