Prepare honey syrup

If you don't have honey syrup ready, make it first by combining equal parts honey and hot water (for example 1/4 cup honey + 1/4 cup hot water). Stir until fully combined and cool before using. Measure 0.25 oz for this drink.

Combine ingredients

Fill a cocktail shaker with ice. Add 1 oz Yellow Chartreuse, 0.5 oz Green Chartreuse, 0.75 oz gin, 0.5 oz fresh lemon juice, 0.25 oz honey syrup and 2 dashes orange bitters to the shaker.

Shake

Secure the shaker and shake vigorously for 12–15 seconds until the outside of the shaker is well chilled and slightly frosted. This both chills and dilutes the drink to balance the potent herbal liqueurs.

Strain

Double-strain the cocktail into a chilled coupe or Nick & Nora glass using a Hawthorne strainer and a fine mesh strainer to remove small ice shards and any pulp from the lemon juice.

Garnish & Finish

Express the oils of a lemon twist over the surface of the cocktail by holding the twist over the glass and giving it a quick squeeze so the oil sprays onto the drink. Rub the peel around the rim if desired, then drop the twist into the glass.

Optional: slap a small sprig of fresh thyme between your palms to release aromatics and rest it on the drink as a fragrant garnish. Serve immediately.
