Chill glass

Place the serving glass in the freezer for a few minutes or fill it with ice and water while you prepare the cocktail to chill the glass.

Measure and combine

In a cocktail shaker, pour 2 oz Cognac, 0.75 oz freshly squeezed lime juice, and 0.5 oz simple syrup.

Add ice

Fill the shaker with ice (about 4 oz worth, or enough to three-quarters fill the shaker).

Shake

Secure the shaker and shake vigorously for 10–15 seconds until the outside of the shaker becomes well chilled and the liquid is properly diluted and aerated.

Empty glass

If you chilled the glass with ice and water, discard the ice water now so the glass is dry and chilled.

Strain

Double-strain the cocktail into the chilled coupe or Nick & Nora glass using a Hawthorne and/or fine strainer to catch ice shards and pulp.

Garnish and serve

Express a lime twist over the drink (optional) and drop a lime wheel or twist onto the rim or into the cocktail. Serve immediately.

Adjust sweetness to taste: if you prefer a sweeter daiquiri, increase simple syrup to 0.75–1 oz. For a tarter drink, reduce lime juice slightly or use 0.5 oz syrup.

Use fresh lime juice — bottled juice will produce a noticeably inferior flavor.

Cognac substitution: a VS or VSOP is best for balance; an XO will be richer and more expensive but works if you want a more luxurious profile.
