Prepare the Potatoes
Peel the russet potatoes and grate them using a box grater or a food processor. Place the grated potatoes in a bowl of cold water to rinse off excess starch.

Drain and Dry
After rinsing, drain the potatoes and lay them out on a clean kitchen towel. Pat them dry to remove as much moisture as possible.

Sauté the Onion
Finely chop the onion and heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Sauté the onion until it is translucent, about 3-4 minutes.

Flip and Finish Cooking
Once the bottom is golden brown, carefully flip the hash browns using a large spatula. Cook the other side for an additional 5-7 minutes until crispy and golden brown.
