    Prepare the Potatoes

    Peel the russet potatoes and grate them using a box grater or a food processor. Place the grated potatoes in a bowl of cold water to rinse off excess starch.

    Drain and Dry

    After rinsing, drain the potatoes and lay them out on a clean kitchen towel. Pat them dry to remove as much moisture as possible.

    Sauté the Onion

    Finely chop the onion and heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Sauté the onion until it is translucent, about 3-4 minutes.

    Cook the Hash Browns

    Add the remaining vegetable oil to the skillet. Once hot, add the grated potatoes, spreading them out evenly. Sprinkle with salt and black pepper. Cook for about 5-7 minutes without stirring to allow the bottom to crisp up.

    Flip and Finish Cooking

    Once the bottom is golden brown, carefully flip the hash browns using a large spatula. Cook the other side for an additional 5-7 minutes until crispy and golden brown.
