Cook the Potatoes
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and season with salt and pepper. Cook for about 10-15 minutes, stirring occasionally, until the potatoes are golden and tender.

Cook the Eggs
While the hash is cooking, in a separate pan, heat the remaining tablespoon of olive oil over medium heat. Crack the eggs into the pan and cook them to your desired doneness (sunny side up, over easy, etc.).

Serve
Divide the corned beef hash onto two plates, top each serving with a cooked egg, and serve with toasted bread on the side.
