    Prepare the Ingredients

    Begin by chopping the corned beef into small pieces, dicing the potatoes, and finely chopping the onion.

    Cook the Potatoes

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and season with salt and pepper. Cook for about 10-15 minutes, stirring occasionally, until the potatoes are golden and tender.

    Add Onions and Corned Beef

    Add the diced onion to the skillet with the potatoes and cook for an additional 5 minutes until the onion is translucent. Stir in the chopped corned beef and cook for another 5-7 minutes until everything is heated through and crispy.

    While the hash is cooking, in a separate pan, heat the remaining tablespoon of olive oil over medium heat. Crack the eggs into the pan and cook them to your desired doneness (sunny side up, over easy, etc.).
