Wine Characteristics

Method

Wine Production Process

  1. 1

    Harvesting Grapes

Select and hand-harvest 100 kg of ripe Cabernet Sauvignon grapes from the vineyard, ensuring that only the best quality grapes are chosen for optimal flavor.

  2. 2

    Crushing and Destemming

Gently crush and destem the harvested grapes to separate the juice from the skins and stems. This process should be done carefully to avoid breaking the seeds.

  3. 3

    Fermentation

Transfer the crushed grapes to a fermentation tank. Add 100 g of yeast and mix well. Allow the mixture to ferment at controlled temperatures for approximately 2 weeks.

  4. 4

    Malolactic Fermentation

After primary fermentation, add 500 g of malolactic cultures to the wine and let it undergo malolactic fermentation for another 2-4 weeks to soften acidity.

  5. 5

    Aging

Once fermentation is complete, transfer the wine to 25 French oak barrels for aging. Allow the wine to age for at least 12 months, during which it will develop complex flavors.

  6. 6

    Adding Sulfites

After aging, add 50 g of sulfites to stabilize the wine and prevent spoilage. Mix thoroughly to ensure even distribution.

  7. 7

    Bottling

Finally, filter the wine and transfer it into bottles. Seal the bottles and label them appropriately for distribution.

  8. 8

    Serving

Serve the Silver Oak Napa 2022 at a temperature of 60-65°F (15-18°C) for the best tasting experience.
