    Generously season the 21oz cowboy ribeye steak on both sides with kosher salt and black pepper, ensuring an even coating. Let it sit at room temperature for about 30 minutes to allow the seasoning to penetrate.

    While the steak is resting, clean the crimini and shiitake mushrooms with a damp cloth and slice them into even pieces.

    Heat the Pan

    In a large cast-iron skillet, heat the clarified butter over medium-high heat until it shimmers but is not smoking.

    Sear the Steak

    Once the butter is hot, carefully add the seasoned ribeye steak to the skillet. Sear for about 4-5 minutes on each side for medium-rare, adjusting the time if you prefer a different doneness.

    In the last 4-5 minutes of cooking the steak, add the sliced crimini and shiitake mushrooms to the skillet, stirring occasionally to ensure they absorb the flavors from the steak and clarified butter.
