    Harvesting Grapes

    Select ripe Pinot Noir grapes from the vineyard, ensuring they are free of blemishes or rot. Harvest approximately 100 kg of grapes.

    Crushing Grapes

    In a clean fermentation vessel, crush the harvested grapes to release their juice. This process can be done by hand or using a grape crusher.

    Adding Yeast

    Sprinkle 5 g of yeast evenly over the crushed grape mixture. Stir gently to incorporate the yeast into the must (the mixture of juice, skins, and seeds).

    Adding Sulfites

    To prevent unwanted microbial growth and oxidation, add 3 g of sulfites to the must. Stir well to ensure even distribution.

    Fermentation

    Cover the fermentation vessel with a clean cloth and allow the mixture to ferment for 7-14 days at a controlled temperature of around 20°C (68°F). Stir daily to promote fermentation.

    Pressing

    Once fermentation is complete, press the mixture to separate the liquid wine from the solids. Use a wine press or a clean cloth to extract as much juice as possible.

    Adding Water

    If necessary, add 200 ml of water to adjust the wine's body and acidity. Stir gently to combine.

    Aging

    Transfer the wine to oak barrels or stainless steel tanks for aging. Allow the wine to mature for at least 6 months, tasting periodically to check for flavor development.

    Bottling

    Once aged to your preference, bottle the wine in clean, sterilized bottles. Seal with corks and label accordingly.
