Prepare the Steak
Take the 8 oz. filet mignon out of the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This helps the steak cook evenly.

Season the Steak
Pat the filet mignon dry with paper towels to remove excess moisture. Season both sides generously with kosher salt and black pepper, pressing the seasoning into the meat.

Heat the Pan
In a large skillet, preferably cast iron, heat the clarified butter over medium-high heat until it's hot and shimmering but not smoking. Ensure the butter is evenly distributed across the pan.

Sear the Steak
Carefully place the seasoned filet mignon in the hot skillet. Sear for about 4-5 minutes on one side without moving it, until a brown crust forms.

Rest the Steak
Once the desired doneness is achieved, remove the steak from the skillet and transfer it to a plate. Tent it loosely with aluminum foil and let it rest for about 5-10 minutes to allow the juices to redistribute.

Slice the filet mignon against the grain and serve immediately. Enjoy with your choice of sides.
