    Remove the filet mignon from the refrigerator and let it sit at room temperature for about 30 minutes to ensure even cooking.

    Season the Meat

    Pat the filet mignon dry with paper towels to remove excess moisture. Season both sides generously with salt, black pepper, and garlic powder.

Cooking

    Heat the Pan

    In a large skillet, heat the olive oil over medium-high heat until it shimmers.

    Sear the Filet Mignon

    Carefully place the filet mignon in the hot skillet. Sear for 4-5 minutes on the first side without moving it, until a golden-brown crust forms.

    Flip and Cook

    Flip the filet mignon using tongs and sear the other side for an additional 4-5 minutes for medium-rare. Adjust cooking time based on your preferred doneness.

    If using, add the butter and fresh rosemary to the skillet during the last minute of cooking, spooning the melted butter over the steaks.
