    Prepare the Calamari

    Rinse the calamari rings under cold water and pat them dry with paper towels. This will help ensure they crisp up nicely when fried.

    Prepare the Breading Station

    In a large mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well until all dry ingredients are evenly combined.

    Prepare the Wet Mixture

    In a separate bowl, whisk together the egg and buttermilk until well combined. This mixture will help the breading stick to the calamari.

    Heat the Oil

    In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to ensure the oil is at the right temperature.

    Bread the Calamari

    Dip each calamari ring into the wet mixture, allowing any excess to drip off. Then, dredge it in the flour mixture, making sure it’s fully coated. Place the breaded calamari on a wire rack or plate.

    Carefully lower the breaded calamari rings into the hot oil, working in batches to avoid overcrowding. Fry for 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove the calamari and transfer them to a paper towel-lined plate.

    Serve the crispy calamari immediately with mango-chile mojo sauce for dipping.
