Method
Wine Production Directions
- 1
Harvesting Grapes
Carefully hand-harvest the Cabernet Sauvignon and Merlot grapes in late September to early October when they are perfectly ripe.
- 2
Crushing and Destemming
Once the grapes are harvested, destem and crush the grapes to release their juice. This process can be done using a mechanical grape crusher.
- 3
Fermentation
Transfer the crushed grapes and juice into fermentation tanks. Add yeast to initiate fermentation. Allow the mixture to ferment for approximately 2-3 weeks at controlled temperatures.
- 4
Pressing
After fermentation is complete, press the wine to separate the liquid from the grape skins. This can be done using a wine press.
- 5
Aging
Transfer the wine into oak barrels for aging. This process typically lasts for 12-24 months, allowing the flavors to develop and mature.
- 6
Bottling
Once aging is complete, the wine is filtered and bottled. Sulfites are added to preserve the wine before sealing the bottles.
