    Remove the bone-in filets from the refrigerator and let them sit at room temperature for about 30 minutes. This helps the meat cook evenly.

    Season the Steaks

    Rub both sides of the filets with olive oil. Generously season each steak with kosher salt and black pepper, pressing the seasoning into the meat.

    Sear the Steaks

    Preheat a cast-iron skillet over medium-high heat. Once hot, add the filets to the skillet. Sear each side for about 4-5 minutes until a golden-brown crust forms.

    Add Flavorings

    After searing, add the fresh rosemary and crushed garlic cloves to the skillet. This will infuse the steaks with aromatic flavors.

    Reduce the heat to medium-low and continue cooking the filets for another 5-7 minutes for medium-rare, basting the steaks with the pan juices occasionally.
