Method

Cooking Pasta

  1. 1

    Prepare the Pasta

In a large pot, bring water to a boil. Add salt to the boiling water, then add the spaghetti. Cook according to package instructions until al dente, usually about 8-10 minutes.

  2. 2

    Reserve Pasta Water

Before draining the pasta, reserve about 1 cup of the pasta cooking water. Then drain the spaghetti and set aside.

Preparing the Sauce

  1. 3

    Cook the Pancetta

In a large skillet over medium heat, add the pancetta. Cook until crispy and golden brown, about 5-7 minutes. Remove from heat and set aside.

  2. 4

    Mix Eggs and Cheese

In a mixing bowl, whisk together the large eggs and grated Parmesan cheese until well combined. Season with freshly ground black pepper to taste.

Combining Ingredients

  1. 5

    Combine Pasta and Pancetta

Add the drained spaghetti to the skillet with the cooked pancetta. Toss to combine, ensuring the pasta is coated with the pancetta fat.

  2. 6

    Add Egg Mixture

Remove the skillet from heat. Quickly pour the egg and cheese mixture over the pasta, tossing rapidly to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Serving

  1. 7

    Plate the Dish

Serve immediately in bowls, garnished with chopped fresh parsley and additional grated Parmesan cheese if desired.
