Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Make the Batter
In a large bowl, whisk together the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and red pepper flakes.

Prepare the Wet Mixture
In another bowl, whisk together the egg and buttermilk until well combined.

Coat the Calamari
Dip the calamari rings into the wet mixture, allowing excess to drip off, then dredge them in the flour mixture until well coated.

Heat the Oil
In a large, deep skillet, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

Fry the Calamari
Fry the coated calamari in batches for 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Sauté the Garlic
In a saucepan, heat the olive oil over medium heat. Add minced garlic cloves and sauté until fragrant, about 1 minute.

Add the Tomatoes
Stir in the canned crushed tomatoes, red pepper flakes, dried oregano, salt, black pepper, and sugar. Bring to a simmer.

Simmer the Sauce
Let the sauce simmer for 15-20 minutes, stirring occasionally to thicken.

Finish with Basil
Remove from heat and stir in the fresh basil leaves.
