Method
Cake Preparation
- 1
Preheat the Oven
Preheat your oven to 425°F (220°C). This ensures that the cake bakes evenly.
- 2
Melt Chocolate and Butter
In a medium saucepan, combine the unsweetened chocolate and unsalted butter. Melt over low heat, stirring constantly until smooth. Remove from heat and let it cool slightly.
- 3
Mix Sugar and Eggs
In a large mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until well combined and slightly thickened.
- 4
Combine Mixtures
Slowly pour the melted chocolate mixture into the egg mixture while whisking continuously to prevent cooking the eggs.
- 5
Add Flour and Flavorings
Sift in the all-purpose flour, salt, and vanilla extract. Gently fold the mixture until just combined; be careful not to overmix.
Baking
- 6
- 7
Fill Ramekins
Evenly distribute the batter among the prepared ramekins, filling them about 3/4 full.
- 8
Bake the Cakes
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft. The tops should look set.
- 9
Cool Slightly
Remove from the oven and let the cakes cool in the ramekins for about 1-2 minutes. This will help them maintain their shape when inverted.
- 10
Serve
Run a knife around the edges of the cakes to loosen them, then carefully invert onto plates. Serve immediately with a scoop of vanilla ice cream on top.
