Mix dry ingredients

In a large bowl, whisk together the flour, sugar, baking powder, and salt until evenly combined.

Mix wet ingredients

In a separate bowl or large measuring cup, whisk the milk, egg, melted butter, and vanilla extract until smooth.

Pour the wet ingredients into the dry ingredients and gently stir with a spatula or wooden spoon just until combined. The batter should be slightly lumpy; do not overmix or pancakes will become tough. Let the batter rest 5 minutes while you heat the pan.

Heat a large nonstick skillet or griddle over medium heat until hot. Lightly grease with the oil or a little butter and wipe off excess with a paper towel so the surface is evenly coated.

Prepare banana: If using mashed banana in the batter, mash the ripe banana with a fork until mostly smooth (leaving a few small chunks is fine). Fold the mashed banana and the cinnamon (if using) into about half the batter for a pronounced banana flavor. Reserve banana slices for topping if desired.

Cook pancakes: For each pancake, scoop about 1/4 cup batter onto the preheated skillet. Spread gently to a round shape. Cook until bubbles form on the surface and edges look set, about 2–3 minutes. Flip and cook until the second side is golden brown, about 1–2 minutes more. Transfer to a plate and keep warm while you cook remaining pancakes.

Blueberry Option

Prepare blueberries

If using frozen blueberries, do not thaw (this helps prevent blue streaking of the batter). Gently fold lemon zest into the batter if using.

For each pancake, pour about 1/4 cup batter onto the skillet. Immediately scatter 8–12 blueberries on top of each pancake. Cook until bubbles appear and edges set, about 2–3 minutes. Flip carefully (blueberries can make the pancake heavier) and cook until the second side is golden, about 1–2 minutes. Transfer to a plate and keep warm.

Stack pancakes and top with butter, banana slices (for the banana version), extra blueberries (for the blueberry version), a dusting of powdered sugar, and warm maple syrup. Serve immediately.

Storage: Refrigerate leftover pancakes in an airtight container for up to 3 days or freeze separated by parchment for up to 1 month. Reheat in a toaster or oven until warmed through.
