Making the Dough

Combine Ingredients
In a large mixing bowl, combine the sourdough starter, all-purpose flour, water, sugar, salt, and olive oil. Mix until a sticky dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 10 minutes until smooth and elastic. Place it in a greased bowl, cover with a cloth, and let it rise in a warm place for about 2 hours or until doubled in size.
Frying the Zeppoli

Shape the Dough
Once risen, punch down the dough and divide it into small balls, about the size of a golf ball.

Heat Oil
In a deep fryer or heavy pot, heat oil to 350°F (175°C).

Fry the Dough Balls
Carefully drop the dough balls into the hot oil, frying in batches. Fry until golden brown on all sides, about 4-5 minutes.

Drain and Dust
Remove the zeppoli from the oil and drain on paper towels. While still warm, dust generously with powdered sugar.
Making the Jivara Sauce

Melt the Ingredients
In a small saucepan over low heat, combine the Jivara chocolate, heavy cream, and butter. Stir until melted and smooth.
Serving

Plate the Dish
Serve the warm zeppoli drizzled with Jivara sauce. Enjoy!
