Preparation

    Prepare the trout

    Preheat the oven to 200°C (400°F). Rinse the whole trout and pat them dry. Season the inside and outside with salt and black pepper.

    Prepare the potatoes

    In a pot, boil the halved baby potatoes in salted water until tender. Drain and set aside.

Cooking

    Crispy Potatoes

    In a large skillet, melt 2 tablespoons of butter with olive oil over medium heat. Add the boiled potatoes and cook until golden and crispy, about 5-7 minutes. Add rosemary, salt, and pepper. Toss to combine and remove from heat.

    Brown Butter

    In another saucepan, melt 4 tablespoons of butter over medium heat. Continue to cook until the butter turns a golden brown color and has a nutty aroma. Remove from heat and set aside.

    Cook the trout

    Place the seasoned trout on a baking sheet. Drizzle with olive oil and roast in the oven for about 15-20 minutes, or until the fish flakes easily with a fork.

Plating

    Serve the dish

    On a plate, place the crispy potatoes, top with the roasted trout, and drizzle with brown butter. Garnish with fish roe and lemon wedges.
