1. Prepare the Pork
In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent.
2. Brown the Meat
Add the pork shoulder to the pot, season with salt and black pepper, and brown on all sides.
3. Add Tomatoes and Simmer
Pour in the canned tomatoes, add chili flakes, and bring to a simmer. Cover and cook on low heat for about 2 hours, or until the pork is tender.
4. Cook the Pasta
In a separate pot, cook the rigatoni according to package instructions until al dente. Drain and set aside.
5. Combine and Serve
Once the pork is tender, shred it in the pot with the sauce. Add the cooked rigatoni and mix well. Serve hot, garnished with grated Parmesan cheese and fresh basil.
