Preparation and Cooking

    Prepare the Potatoes

    Peel the Yukon Gold potatoes and cut them into thin slices. Rinse under cold water and pat dry with a towel.

    Fry the Potatoes

    In a large skillet, heat oil over medium-high heat. Once hot, add the potato slices in a single layer. Fry until golden and crispy, about 4-5 minutes per side. Remove from skillet and drain on paper towels. Season with salt and black pepper.

    Make the Spicy Hollandaise

    In a heatproof bowl, whisk together egg yolks, lemon juice, and Dijon mustard. Place the bowl over a pot of simmering water (double boiler). Slowly drizzle in melted unsalted butter while whisking continuously until thickened. Stir in hot sauce, Espelette pepper, and season with salt to taste.

    Serve

    Arrange the fried potato slices on a serving plate and drizzle generously with the spicy hollandaise sauce. Garnish with additional Espelette pepper if desired.
