    Prepare the Pork Belly

    Preheat the oven to 300°F (150°C). Score the skin of the pork belly in a crosshatch pattern and season with salt, black pepper, and brown sugar. Place in a roasting pan and cover with foil.

    Roast the Pork Belly

    Roast the pork belly in the preheated oven for about 2.5 to 3 hours, until tender. Remove the foil for the last 30 minutes to allow the skin to crisp up.

    Prepare the Focaccia

    While the pork is roasting, drizzle olive oil on both sides of the focaccia slices and grill them on a grill pan until golden brown and crispy.

    Assemble the PBLT

    Once the pork belly is done, let it rest for 10 minutes. Slice the pork belly and layer it on one slice of grilled focaccia. Top with sliced tomato, mixed greens, and a generous spoonful of salsa verde. Add the second slice of focaccia on top.

    Cut the sandwich in half and serve immediately, enjoying the combination of flavors.
