Prepare the Pancake Batter
In a large mixing bowl, whisk together the flour, baking powder, and salt. In another bowl, beat the egg and then add the milk. Combine the wet ingredients with the dry ingredients and mix until just combined. Fold in the pickled peppers and farm greens gently.

Cook the Pancakes
Heat a non-stick skillet or griddle over medium heat. Once hot, pour 1/4 cup of batter for each pancake onto the skillet. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.

Prepare the Hollandaise
In a small saucepan, melt 1/2 cup of unsalted butter. In a separate bowl, whisk the egg yolks and lemon juice together until thick. Slowly drizzle in the melted butter while whisking continuously until the sauce is smooth and creamy. Season with salt to taste.

Serve
Stack the pancakes on a plate, drizzle with hollandaise sauce, and garnish with additional pickled peppers and greens if desired.
