Cooking Pasta

    Boil Water

    In a large pot, bring 4 quarts of water to a rolling boil. Add 1 tablespoon of salt.

    Cook Spaghetti

    Add the spaghetti to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain Pasta

    Once cooked, drain the pasta in a colander and set aside, reserving about 1 cup of the pasta water.

Preparing Vegetables

    Chop Vegetables

    While the pasta cooks, chop the bell peppers, zucchini, carrot, and halve the cherry tomatoes.

    Sauté Vegetables

    In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add the chopped vegetables and sauté for about 5-7 minutes until tender.

    Add Spinach

    Stir in the fresh spinach and cook until wilted, about 2 minutes.

Making Garlic Sauce

    Prepare Garlic

    In the same skillet with the vegetables, add minced garlic and red pepper flakes. Sauté for 1-2 minutes until fragrant.

    Combine Sauce Ingredients

    Add lemon juice, black pepper, and half of the reserved pasta water to the skillet. Stir to combine.

Combining Everything

    Mix Pasta and Sauce

    Add the drained spaghetti to the skillet and toss everything together. If the mixture seems dry, add more reserved pasta water as needed.

    Serve

    Plate the pasta primavera and sprinkle with grated Parmesan cheese before serving.
