Fries Preparation
Cut the Potatoes
Wash and peel the russet potatoes. Cut them into fries about 1/4 inch thick.
Soak the Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch.
Preheat the Oil
In a deep fryer or a large pot, heat the vegetable oil to 350°F (175°C).
Fry the Potatoes
Drain the soaked fries and pat them dry with paper towels. Carefully add a batch of fries to the hot oil. Fry until golden brown, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels. Sprinkle with salt while hot.
Assembly
Prepare the Base
Place a generous portion of the crispy fries on a serving platter or individual plates.
Add the Protein
Top the fries with smoked brisket or smoked pulled pork, distributing evenly.
Add Cheese and Vegetables
Sprinkle the shredded mozzarella cheese over the meat, followed by the sliced jalapenos and red onions as per your taste.
Drizzle with BBQ Sauce
Finish by drizzling BBQ sauce over the top of the loaded fries.
