Preparing the Cake

    Preheat the Oven

    Preheat your oven to 200°C (400°F).

    Melt Chocolate and Butter

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a double boiler or in the microwave in 30-second intervals, stirring until smooth.

    Mix Sugar and Eggs

    In a separate bowl, whisk together the granulated sugar, large eggs, and large egg yolk until well combined and slightly frothy.

    Combine Mixtures

    Add the melted chocolate and butter mixture to the egg mixture, and stir until fully incorporated.

    Add Dry Ingredients

    Sift the all-purpose flour and salt into the chocolate mixture, then fold gently until just combined. Avoid overmixing.

    Prepare the Ramekins

    Grease four ramekins with butter and dust them with cocoa powder to prevent sticking.

    Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.
