Fried Alligator Bites

Method

Preparation and Cooking

  1. 1

    Marinate the Alligator

Place the alligator meat in a bowl and pour the buttermilk over it. Cover and refrigerate for at least 1 hour to marinate.

  2. 2

    Prepare the Coating

In a separate bowl, combine the cornmeal, flour, Cajun seasoning, salt, and black pepper. Mix well.

  3. 3

    Heat the Oil

In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  4. 4

    Coat the Alligator

Remove the alligator from the buttermilk and allow excess liquid to drip off. Dredge each piece in the cornmeal mixture until fully coated.

  5. 5

    Fry the Alligator Bites

Carefully place the coated alligator bites into the hot oil, frying in batches to avoid overcrowding. Fry for about 3-4 minutes or until golden brown and cooked through.

  6. 6

    Drain and Serve

Remove the fried alligator bites from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with chile-garlic dipping sauce.
