Prepare the Meat
In a skillet over medium heat, cook your choice of meat until fully cooked. If using ground beef, break it apart as it cooks. For shredded chicken, heat it until warm. If using chorizo, crumble it and cook until browned.

Prepare the Cheese Mixture
In a large bowl, combine the shredded cheddar and Monterey Jack cheeses. This will create a melty cheese topping for the nachos.
Assemble the Nachos

Layer the Tortilla Chips
Preheat your oven to 350°F (175°C). On a large oven-safe platter or baking sheet, spread the tortilla chips evenly across the surface.

Add Meat and Cheese
Evenly distribute the cooked meat over the tortilla chips. Then sprinkle the cheese mixture generously on top of the meat and chips.

Add Jalapeños
Scatter the pickled jalapeños over the cheese-covered chips.

Bake the Nachos
Place the assembled nachos in the preheated oven and bake for about 10-15 minutes, or until the cheese is fully melted and bubbling.

Garnish and Serve
Remove the nachos from the oven. Top with optional garnishes such as sour cream, guacamole, chopped cilantro, and sliced green onions. Serve immediately.
