Caramel Preparation

Make the Caramel
In a medium saucepan over medium heat, combine the granulated sugar and water. Stir until the sugar is dissolved. Continue cooking without stirring until the mixture turns a deep amber color, about 8-10 minutes. Remove from heat immediately.

Coat the Pan
Quickly pour the caramel into a round flan mold or a 9-inch cake pan, tilting the pan to coat the bottom evenly. Set aside to cool and harden.

Pour into Pan
Carefully pour the custard mixture over the set caramel in the prepared pan.
Baking

Prepare for Baking
Preheat the oven to 350°F (175°C). Place the flan mold in a larger baking dish and fill the baking dish with hot water until it reaches halfway up the sides of the flan mold.

Bake the Flan
Bake in the preheated oven for about 50-60 minutes, or until the flan is set and a knife inserted into the center comes out clean.
Cooling and Serving

Cool the Flan
Remove the flan from the oven and let it cool in the water bath for about 30 minutes. Then, refrigerate for at least 4 hours or overnight.

Unmold and Serve
To unmold, run a knife around the edge of the flan. Place a serving plate on top of the mold and invert it. Gently lift the mold away. Serve chilled.
