Prepare Vegetables

    Chop the Vegetables

    Dice the tomatoes, onion, and bell pepper into small pieces.

Cook Potatoes and Refried Beans

    Heat Olive Oil

    In a skillet, heat 1 tablespoon of olive oil over medium heat.

    Cook Potatoes

    Add the cup of diced potatoes to the skillet and cook until golden brown and tender, about 10-15 minutes. Stir occasionally.

    Heat Refried Beans

    In a small saucepan, heat the refried beans over low heat until warmed through.

Cook Eggs and Vegetables

    Fry the Eggs

    In a separate skillet, heat the remaining tablespoon of olive oil over medium heat. Crack the eggs into the skillet, sprinkle with salt and black pepper, and cook until the whites are set but the yolks are still runny, about 3-4 minutes.

    Add Vegetables

    In the same skillet as the eggs, add the chopped tomatoes, onions, and bell peppers around the eggs and cook for an additional 2-3 minutes until the vegetables are soft.

    Melt the Cheese

    Sprinkle the Jack cheese over the eggs and vegetables, cover the skillet with a lid, and let it sit for 1-2 minutes until the cheese is melted.
