Main Ingredients

Pico de Gallo

Method

Preparing the Carne Asada

  1. 1

    Marinate the Steak

If desired, marinate the fajita steak in your favorite marinade for at least 30 minutes to enhance flavor.

  2. 2

    Cook the Steak

Heat a skillet over medium-high heat and add a little olive oil. Once hot, add the fajita steak and cook for about 3-4 minutes on each side, or until it reaches your desired doneness. Remove from heat and let it rest for a few minutes before slicing.

Making Pico de Gallo

  1. 3

    Combine Ingredients

In a medium bowl, combine the diced tomato, diced onion, chopped cilantro, lime juice, and salt. Mix well and let sit for at least 10 minutes to allow the flavors to meld.

Cooking the Eggs

  1. 4

    Scramble the Eggs

In a small bowl, beat the eggs with a pinch of salt and pepper. In a non-stick skillet over medium heat, add a little oil or butter. Pour in the beaten eggs and gently stir until they are cooked through but still soft. Remove from heat.

Cooking the Potatoes and Beans

  1. 5

    Cook the Potatoes

In a separate skillet, heat olive oil over medium heat. Add the cubed potatoes, season with salt and pepper, and cook until golden brown and tender, about 10-15 minutes, stirring occasionally.

  2. 6

    Heat the Refried Beans

In a small saucepan, heat the refried beans over low heat until warmed through.

Serving the Dish

  1. 7

    Plate the Meal

On a plate, arrange the sliced carne asada, scrambled eggs, and a generous scoop of pico de gallo. Serve with sides of refried beans and crispy potatoes.
