    Wash and dice the potatoes into small cubes. In a bowl, toss the diced potatoes with olive oil, salt, pepper, and paprika.

    Preheat a skillet over medium heat. Add the seasoned potatoes and cook for about 15-20 minutes, stirring occasionally, until golden brown and tender.

Preparation of Filling

    Cook the Ground Beef

    In a separate skillet, cook the ground beef over medium heat until browned and fully cooked, about 7-10 minutes. Drain excess fat.

    Scramble the Eggs

    In a mixing bowl, whisk the eggs until well combined. In a non-stick skillet, scramble the eggs over medium heat until just set, about 3-4 minutes.

    Combine Fillings

    Once the beef is cooked and the eggs are scrambled, mix them together in the skillet. Add the refried beans and stir until everything is heated through.

Assembling the Burrito

    Assemble the Burrito

    Lay a flour tortilla flat on a clean surface. Spoon a portion of the beef-egg-bean mixture onto the center of the tortilla, sprinkle with queso, and drizzle with ancho chile sauce.

    Fold in the sides of the tortilla and then roll it from the bottom up to enclose the filling securely. Repeat with remaining tortillas.
