Method

Ravioli Preparation

    Make the Dough

    In a large bowl, combine the flour and salt. Create a well in the center and add the eggs and olive oil. Gradually mix the flour into the wet ingredients until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Wrap in plastic wrap and let rest for 30 minutes.

    Prepare the Filling

    In a bowl, mix the ricotta cheese with a pinch of salt. Set aside.

    Roll out the Dough

    After resting, divide the dough into quarters. Roll out each quarter into thin sheets, about 1/16 inch thick.

    Form the Ravioli

    Place small spoonfuls of the ricotta mixture onto the rolled dough, spacing them about 2 inches apart. Fold the dough over to cover the filling and press down to seal. Cut between the ravioli to separate.

Alfredo Sauce Preparation

    Cook the Garlic

    In a saucepan over medium heat, melt the butter. Add minced garlic and sauté for about 1-2 minutes until fragrant.

    Make the Sauce

    Pour in the heavy cream and bring to a gentle simmer. Reduce heat and add the grated Parmesan cheese, stirring until melted and smooth.

    Season the Sauce

    Add salt and freshly ground black pepper to taste. Stir well and keep warm until the ravioli are ready.

Cooking the Ravioli

    Boil the Ravioli

    Bring a large pot of salted water to a boil. Gently add the ravioli and cook for 3-4 minutes, or until they float to the surface and are tender.

    Serve

    Using a slotted spoon, transfer the ravioli to a serving dish. Pour the Alfredo sauce over the ravioli and garnish with chopped fresh parsley.
