Chicken Preparation

    Prepare the Chicken

    Start by flattening the chicken breasts to an even thickness using a meat mallet. This ensures even cooking.

    Breading the Chicken

    Set up a breading station with three shallow dishes: one for flour mixed with salt and pepper, one for beaten eggs, and one for bread crumbs. Dredge each chicken breast in flour, then dip into the egg, and finally coat with bread crumbs. Press the crumbs onto the chicken to ensure they stick well.

    Cook the Chicken

    In a large skillet, melt 2 tablespoons of butter over medium heat. Add the breaded chicken breasts to the skillet and sauté for 4-5 minutes on each side until golden brown and cooked through. Remove the chicken and set aside.

    Make the Sauce

    In the same skillet, add the remaining butter and minced garlic, cooking for about 1 minute until fragrant. Carefully pour in the Chablis wine and scrape any browned bits from the bottom of the pan. Let it simmer for 2-3 minutes.

    Stir in the lemon juice and capers, then return the chicken to the skillet to coat in the sauce. Cook for another minute to heat through and blend the flavors. Garnish with chopped parsley before serving.

Pasta or Vegetables

    In a large pot, bring salted water to a boil. Add the bow tie pasta and cook according to package instructions until al dente. Drain and set aside.

    If you choose to serve with steamed vegetables, steam the broccoli or asparagus until tender-crisp, about 5-7 minutes. Season with salt to taste.
