Cook Quinoa
Rinse 1 cup of quinoa under cold water. In a medium saucepan, combine the rinsed quinoa with 2 cups of water and a pinch of salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes until all water is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.

Sauté Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 2 teaspoons of minced garlic and sauté for 1 minute until fragrant. Add 1 cup each of diced zucchini and bell pepper, stirring occasionally for about 5-7 minutes until they are tender. Add 1 cup of halved cherry tomatoes and 2 cups of spinach, cooking until the spinach wilts.

Mix Everything Together
In a large bowl, combine the cooked quinoa, sautéed vegetables, and 1 cup of drained chickpeas. Drizzle with 2 tablespoons of lemon juice, and season with 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 tablespoon of chopped fresh basil. Toss everything together until well mixed.
