Reserve Pasta Water
Before draining the pasta, reserve about 1 cup of pasta cooking water. This will help to create a silky sauce later.

Mix the Egg Mixture
In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.

Cook the Pork
In a large skillet over medium heat, cook the pancetta or guanciale until crispy, about 5-7 minutes. Remove from heat.

Add the Egg Mixture
Quickly pour in the egg mixture while tossing the pasta. The residual heat from the pasta will cook the eggs gently, forming a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
