Method

Cooking the Pasta

    Boil the Pasta

    In a large pot, bring salted water to a boil. Add linguine and cook according to package instructions until al dente, usually around 8-10 minutes.

    Reserve Pasta Water

    Before draining the pasta, reserve about 1 cup of pasta cooking water. This will help to create a silky sauce later.

    Drain the Pasta

    Drain the linguine and return it to the pot, off the heat.

Preparing the Sauce

    Mix the Egg Mixture

    In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.

    Cook the Pork

    In a large skillet over medium heat, cook the pancetta or guanciale until crispy, about 5-7 minutes. Remove from heat.

Combining Everything

    Combine Pasta and Pork

    Add the drained linguine to the skillet with the cooked pancetta or guanciale. Toss to combine.

    Add the Egg Mixture

    Quickly pour in the egg mixture while tossing the pasta. The residual heat from the pasta will cook the eggs gently, forming a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

    Garnish and Serve

    Serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
