Calamari Preparation

    Prepare the Calamari

    Rinse the calamari under cold water and pat dry with paper towels. Slice the calamari bodies into rings, about 1/2 inch thick. Set aside.

    Make the Batter

    In a large bowl, combine the flour, cornstarch, salt, black pepper, and paprika. In another bowl, whisk together the egg and milk until well combined.

    Coat the Calamari

    Dip the calamari rings into the egg mixture, then dredge them in the flour mixture until evenly coated.

    Heat the Oil

    In a deep skillet or pot, heat the vegetable oil over medium heat until it reaches 350°F (175°C). You can test the oil by dropping in a small piece of batter; it should sizzle and rise to the surface.

    Fry the Calamari

    Carefully add the coated calamari rings to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown, turning them occasionally. Use a slotted spoon to remove them and place them on a plate lined with paper towels to drain excess oil.

Marinara Sauce Preparation

    Sauté Garlic

    In a saucepan over medium heat, add the olive oil. Once hot, add minced garlic cloves and sauté for about 1 minute until fragrant, being careful not to burn them.

    Add Tomatoes and Seasoning

    Pour in the crushed tomatoes and add the oregano, salt, and black pepper. Stir well to combine.

    Simmer the Sauce

    Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally. Add fresh basil just before serving.
