Method
Carnitas
Braise pork
Preheat oven to 300°F (150°C). In a Dutch oven or ovenproof pot, combine pork pieces, orange juice, broth, lime juice, minced garlic, oregano, cumin, 1.5 tbsp kosher salt, black pepper and bay leaves. Bring to a simmer on the stove over medium heat, cover, then transfer to the oven. Braise 2 to 2.5 hours until pork is very tender and shreds easily.
Shred and crisp
Remove pork from braising liquid, discard bay leaves, and shred with two forks. Reserve about 1/2 cup braising liquid. Heat 2 tbsp vegetable oil in a large skillet over medium-high heat. Add shredded pork in a single layer; pour a few tablespoons of reserved braising liquid over it and let the liquid evaporate and the edges crisp, about 4–6 minutes. Toss and crisp another 2–3 minutes. Adjust salt to taste.
Mexican Rice
Stir in tomato sauce, chicken broth, cumin and 3/4 tsp salt. Bring to a simmer, cover, reduce heat to low and cook 15–18 minutes until rice is tender and liquid is absorbed. Remove from heat and let sit covered 5 minutes. Fluff with a fork and fold in peas and carrots if using.
Beans
Add drained beans, 1/4 tsp cumin, 1/4 tsp salt and 1 tbsp lime juice; cook until warmed through, 3–4 minutes. Mash lightly with the back of a spoon for a creamier texture if desired. Keep warm.
Spinach Cream Sauce
In a blender or food processor, combine blanched spinach, 1/2 cup sour cream, 1/4 cup Greek yogurt, chopped cilantro, 1 tbsp lime juice, 1 minced garlic clove, 1/2 tsp salt and 2 tbsp water. Blend until very smooth. Adjust consistency with additional water and seasoning to taste. Chill or hold at room temperature.
Roasted Corn & Toppings
Preheat a skillet or griddle over medium-high heat. Toss corn kernels with 1 tsp vegetable oil, 1/4 tsp smoked paprika and a pinch of salt. Add to hot skillet and roast, stirring occasionally, until kernels are lightly charred, 5–7 minutes. Remove from heat and set aside.
Prepare assembly toppings: slice avocado, have shredded lettuce, pico de gallo, sour cream and pickled jalapeños ready.
Assembly
Lay a warm flour tortilla flat. Add 1/2 cup Mexican rice down the center, then 1/3 to 1/2 cup warm beans, and 3/4 to 1 cup crisped carnitas. Spoon 2–3 tbsp spinach cream sauce over the filling, then sprinkle 2 tbsp roasted corn on top.
Top with a handful (about 1/2 cup) shredded lettuce, 2 tbsp pico de gallo, a dollop (about 1 tbsp) sour cream, 2–3 avocado slices and pickled jalapeños to taste. Serve with a lime wedge on the side.
Repeat for remaining tortillas. Serve immediately while warm.
