Method
Cake Base
- 1
Prepare the Oven
Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- 2
Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
- 3
Cream Butter and Sugar
In another bowl, cream the softened butter and sugar together until light and fluffy using an electric mixer.
- 4
Add Eggs and Vanilla
Add the eggs one at a time, mixing well after each addition. Then mix in the vanilla extract.
- 5
Combine Mixtures
Gradually add the dry mixture to the wet mixture, alternating with the milk, and mix just until combined.
- 6
Bake the Cake Layers
Divide the batter evenly between the two prepared cake pans and smooth the tops. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- 7
Cool the Cake
Allow the cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
Strawberry Filling
- 8
Prepare the Strawberries
In a medium bowl, combine the sliced strawberries, granulated sugar, and lemon juice. Toss gently and let sit for about 15 minutes to allow the strawberries to release their juices.
Whipped Cream Frosting
- 9
Whip the Cream
In a chilled mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Beat on medium-high speed until soft peaks form.
- 10
Frost the Cake
Once the cake layers are completely cool, place one layer on a serving plate. Spread a generous amount of the strawberry filling on top, followed by a layer of whipped cream frosting. Place the second cake layer on top and frost the top and sides of the cake with the remaining whipped cream.
- 11
Garnish
Decorate the top of the cake with any remaining strawberry slices and serve.
