Preparation

  1. 1

    Prepare the Green Rice

Cook rice according to package instructions, then mix with chopped cilantro, lime juice, and salt to taste to create a flavorful green rice.

  2. 2

    Cook the Frijoles

If you're using dried beans, soak them overnight and then boil until tender. If using canned beans, simply rinse and heat them in a small pot over medium heat.

  3. 3

    Prep the Avocado

Slice the avocado in half, remove the pit, and scoop out the flesh. Cut into slices or mash it with a fork, adding a pinch of salt and lime juice if desired.

  4. 4

    Grate the Cheese

Using a box grater, shred the jack cheese and set aside.

Assembly

  1. 5

    Warm the Tortillas

In a dry skillet over medium heat, warm the flour tortillas for about 30 seconds on each side until pliable.

  2. 6

    Assemble the Burrito

Place a warm tortilla on a flat surface. Layer with a scoop of green rice, frijoles, sliced avocado, shredded lettuce, a sprinkle of shredded jack cheese, a dollop of crema, and a spoonful of salsa fresca.

  3. 7

    Roll the Burrito

Fold in the sides of the tortilla and then roll from the bottom up tightly to enclose the filling. Repeat with the remaining tortillas and filling.

Serving

  1. 8

    Serve Warm

Cut the burritos in half and serve immediately with extra salsa fresca and crema on the side.
