Taquito Filling

For the Taquitos

Method

Preparing the Filling

  1. 1

    Boil the Potatoes

In a large pot, add the potatoes and cover with water. Bring to a boil and cook until fork-tender, about 15-20 minutes.

  2. 2

    Mash the Potatoes

Drain the potatoes and return them to the pot. Add salt, black pepper, and ground cumin. Mash until smooth and creamy. Set aside to cool.

Assembling the Taquitos

  1. 3

    Prepare Tortillas

Heat a skillet over medium heat. Lightly warm corn tortillas for about 30 seconds on each side to make them pliable.

  2. 4

    Fill and Roll

Place about 2 tablespoons of the potato filling in the center of each tortilla. Roll tightly and secure with a toothpick if necessary.

Frying the Taquitos

  1. 5

    Heat Oil

In a large frying pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

  2. 6

    Fry the Taquitos

Carefully place the rolled taquitos in the hot oil, frying them in batches until golden brown and crispy, about 3-4 minutes per side.

  3. 7

    Drain

Once fried, remove the taquitos and place them on paper towels to drain excess oil.

Serving the Tacos Dorados

  1. 8

    Assemble the Dish

Place three taquitos on a plate. Top with shredded iceberg lettuce, a drizzle of crema, crumbled queso fresco, and a generous spoonful of tomatillo salsa.

  2. 9

    Enjoy

Serve immediately while hot and crispy, and enjoy your Tacos Dorados de Papa!
