Steak Preparation

    Grill the Skirt Steak

    Preheat your grill to high heat. Season the skirt steak with salt and pepper. Once the grill is hot, place the steak on the grill and cook for about 3-4 minutes on each side for medium-rare, or until the desired doneness is reached. Remove the steak from the grill and let it rest for 5 minutes before slicing.

    Prepare the Salad

    In a large salad bowl, add the organic mixed greens as the base. Slice the avocado in half, remove the pit, and scoop out the flesh. Cut the avocado into slices and add it to the bowl. Add the roasted corn and halved cherry tomatoes.

    Add Cheese

    Crumble the Point Reyes blue cheese over the salad mixture.

    Add Sliced Steak

    After the skirt steak has rested, slice it against the grain into thin strips. Place the sliced steak on top of the salad.

Dressing and Serving

    Drizzle the balsamic vinaigrette over the salad to taste, and toss gently to combine all ingredients.
